Fruit Salad


This is also a great after school snack, or late-night treat. I also use it as a side because it's so easy to make.

Zucchini Date Muffins


3/4 c. wheat or oat bran

3/4 c. whole wheat flour

1/4 c. sugar

1 1/2 tsp. cinnamon

1 tsp. baking powder

1 tsp. baking soda

1 egg slightly beaten

1/2 c. vanilla yogurt

1 Tbsp. honey

1/4 c. vegetable oil

1 c. zucchini, grated

1/2 c. dates coarsely chopped

1 tsp. orange zest, grated

vanilla

dash of salt


Preheat oven to 400 degrees F. Lightly grease 12 cup muffin tin. In a large bowl, whisk together egg, yogurt, honey, and oil. Add zucchini, dates and orange zest and mix thoroughly. Add to the dry mixture, stirring till just moistened. Fill muffin cups 3/4 full. Bake for 20-25 minutes, until muffins are slightly browned. Remove from tin and cool on wire rack. Makes 12 muffins.


*I got this one off the back of the Stonyfield yogurt container. They have zucchini, dates, yogurt and honey (we also add pecans), plus they are low in fat and sugar. My kiddos love them.

Chocolate Pretzels



After making your cake balls, you may have left-over chocolate. Just break out the bag of pretzels in the pantry and dip them. Set them on wax paper to set up.

My Top 4 favorite Sugarless Snacks

1. Bagged Sugar Snapped peas
can always find at Walmart and if you're lucky at the commissary

2. Wilson's mini sweet peppers
again, Walmart

3. Emeralds Cocoa Roast Almonds
great when you need a chocolate fix

4. My shaved ice machine
I add the individual crystal light packs (sorry patty) to a cup with just a little bit of water or I pour over a no carb chocolate shake

Healthy Christmas Tree Snack


I saw this at gourmetmomonthego.com and thought it was so cute I had to start with it!! Plus I love sugar snap peas. ((I don't have to list the recipe do I??)) There was one suggestion to cut cheese slices into ornament shapes to decorate the tree with. Fun.

halloween snacks

I was surfing for healthier halloween ideas, when I found this amazing website (maybe you've seen it?). My first reaction was excitement at how many cute things there were. That quickly led to feeling overwhelmed and depressed (what kind of a mother doesn't make an ediblechandelier for her child's afternoon snack?!!). But then I gave myself a pep talk and decided I would feel better if I vowed to do one fun recipe per holiday. I don't have to do it all right?? right??

Ok, so I will share the link with you if you promised not to be overwhelmed and just excited about some new ideas!! Probably you are all much more secure in your motherhood then I am anyway;)
