Pumpkin Pie Cake

Cake

Ingredients:

• 1 yellow cake mix
• 1 egg
• 1/2 C butter, melted
• 1 small can pumpkin (about 15 oz.)
• 2 tsp. pumpkin spice
• 1/2 C brown sugar
• 2 eggs
• 2/3 C evaporated milk

Directions:

Measure 1 C of cake mix and set aside. Mix remaining cake mix, 1 egg and butter. Press in 9x13 pan. Mix together pumpkin, pumpkin spice, brown sugar, 2 eggs and evaporated milk. Pour over cake mix. Sprinkle with topping. Bake at 350 for 40-45 min.

Topping

Ingredients:

• 1 C cake mix
• 1/2 C sugar
• 1 tsp cinnamon
• 1 tbl melted butter

Directions:

Mix together with fork and sprinkle over pumpkin mixture.

It's awesome! I swear I was biting into a piece of heaven. The top is kind of crunchy like a streusel or coffe cake, the pumpkin is all soft and gooey, and the bottom is like a cake. . .so darn fantastic!
